Almond flour is not often found in our stores. How to make your own almond flour? It’s not at all difficult, and in my opinion, homemade flour is even superior in quality to store-bought flour.

If the flour is used to make French cakes, then it needs to be sifted through a fine sieve, you will have to tinker. In other cases (sponge cake, frangipane, fillings for pies and pastries), particularly fine grinding is not required and the process is not so labor-intensive.

Pour boiling water over almonds and leave for 10 minutes.

After this manipulation, the skin of the nuts is very easily removed. If the almonds were very dry, then you need to repeat the procedure with boiling water again.

If the oven is electric, then this is easier; with a gas oven you need to be vigilant. Then the almonds need to be completely cooled, you can put them in the freezer for 20-30 minutes.

Grind dry nuts in a blender or coffee grinder in small portions, I prefer a blender. Grind for no more than 20-30 seconds, shaking the coffee grinder or blender periodically. Since the knives become hot during operation and the nuts may release oil, grinding for a long time may result in a paste instead of flour. For the same reason, if you are going to make almond flour for future use and more, take breaks from working - you can eat some nuts and cool the blender slightly.

The finished flour should be sifted through a sieve; if large particles remain, grind them again or set aside and use for biscuits. For example, which is used in coconut cake.

In recipes that do not require very fine grinding, you can grind the almonds directly with sugar or powdered sugar, just take the amount of sugar and almonds needed for the recipe. If the whiteness of the flour is not important, then you don’t have to peel the nuts; in a chocolate sponge cake, for example, you won’t see a difference. Mix 40 grams of chocolate with 40 grams of 33% cream. Melt the chocolate and cream in a water bath or in the microwave. Grind 3-4 cocoa beans. Add to filling. Use a pastry bag to place the filling onto the round halves.

Cover the top with the “empty” halves and combine the cakes.



Place in the refrigerator for 24 hours.

Remove the dessert from the refrigerator half an hour before serving so that the cookies are not cold and the filling is hard.

Marzipan is an ancient confectionery product. They say that it appeared during a famine, when there was nothing to make bread from except almonds. It is loved and prepared in many European countries. There are two ways to prepare marzipan:

  • cold;
  • hot.

The cold method involves grinding all the ingredients and combining them. Instead of sugar, powdered sugar is used.

The hot method involves preparing sugar syrup and then combining it with ground almonds and the rest of the ingredients.

In both cases, the mass must be thoroughly mixed. Only by following this rule, the dough will turn out like plasticine, and it will be possible to sculpt different shapes.

The main ingredients of marzipan are bitter and sweet almonds, as well as sugar. However, today many variations of the marzipan recipe have been invented. Some of them are kept secret, some are available to everyone. Below are two simple marzipan recipes.


Cold way

Peel 200 grams of sweet and 2 bitter almonds. Dry in the oven and grind into flour. Combine 200 grams of powdered sugar, 1 egg white, 5-6 drops of lemon juice, 2 drops of almond essence and a little food coloring. Stir the mixture with ground almonds. Prepare 2 plates 3 cm thick. Wrap in foil and leave for a couple of days.


Hot way

Peel 1 cup almonds. Dry in the oven and grind thoroughly. Pour 1 cup of sugar with a quarter cup of water and prepare syrup. Place the almonds in the syrup and heat, stirring, for four or five minutes. Then add some almond essence and food coloring.

Make the desired shape. From this dough you can make candies, decorative decorations for cakes and many other figures (animals, fruits, flowers, etc.).


Mix 300 g flour with 200 g butter. Add sugar, soda (quenched with vinegar), chicken eggs, a little salt and 200 g of crushed marzipan. Knead the dough and put it in the refrigerator. After 1 hour you can prepare cookies. If desired, cover the finished cookies with chocolate or berry or fruit jam.


Chocolate nut cookies

Cookies consist of two parts: dough and filling. For the dough you need 500 g of flour, 100 g of cocoa powder, 250 g of butter, 2 eggs, 100 g of milk, 200 g of sugar and salt. Prepare the dough and refrigerate for an hour.

Prepare the filling from 300 g almonds, 100 g flour, 50 g sugar, 1 egg, 150 g butter and half a teaspoon of salt. Combine everything and mix thoroughly.

Roll out the dough on one sheet of baking paper and the filling on another. Make one side of the filling 3 cm smaller. Place the filling on the dough and roll it into a roll. Place in the freezer. After 1 hour, remove the roll from the freezer and cut it into one-centimeter thick circles. Place in the oven at 180°C and bake for 20 minutes.


Almond pie “5 spices”

Grind 120 g almonds with 3 tablespoons sugar in a blender. Mix the resulting powder with 80 g of flour and 0.5 tsp. ground cinnamon, 0.5 tsp. ground ginger, 0.5 tsp. ground cloves, 0.25 parts. ground anise seeds, 0.25 tsp. ground fennel seeds. Mix 3 eggs with 1 cup sugar. Beat the egg and sugar in a water bath for 4 minutes. Remove from heat and add salt. Beat some more time. Soften the butter and gradually add the egg and almond mixtures. Bake the resulting dough in the oven for 30-35 minutes, covered with parchment at a temperature of 180 °C.

To prepare the glaze, beat 125 g butter with 125 g sugar. Add 0.5 tsp. almond extract. While whisking, add 125 warm milk. Cover the top of the cooled pie with frosting. Place in the refrigerator for 8 hours. The pie can be decorated with toasted almonds and pieces of candied ginger.


How to make at home

To make almond flour you will need some almonds. First, peel the skins from the nuts, scalding them with water first. Then dry in the oven at 100 degrees Celsius.   • When the beans have cooled, they are poured into the coffee grinder and the device is turned on for just a few seconds. But the process should be interrupted every 18-20 seconds, because... the blades heat up very quickly, causing the almonds to release oil and the flour itself to form into weird clumps.
  • If instead of a coffee grinder you have a meat grinder, then the process will be identical. Only the entire mass is passed through the unit twice.
  • The finished flour should be stored in a tightly sealed jar or bag, always in a dry place. She is afraid of dampness and moisture, instantly “huddling up.”
  • When adding flour to the dough, it is first sifted so that it is distributed evenly in the dough itself.

5. To prevent the flour from becoming lumpy during the grinding process, it can be mixed with rusk powder or regular wheat flour.

6. Once cooked, pass the mixture through a fine kitchen flour sieve. If there are large pieces left, pass them through the blender/coffee grinder again.
