Fragrant and tender baked chicken flesh goes well with mushrooms, cheese, sour cream. Fillings and sauces soak the chicken flesh, adding juiciness and flavor to it. In fact, this is a variation of Kiev cutlet, so dearly loved by everyone. It is easy to create a fresh culinary masterpiece, because it is prepared quite simply, and on the table it looks festive and tasty.

Selection and preparation of ingredients

Needless to say, freshness chicken fillet ensure the integrity of the roll during cooking. If you want to achieve more juiciness of chicken dishes, marinate the parts of the chicken that you use for several hours before cooking.

Recipes for chicken rolls with mushrooms

The royal food that came to us along with the cultural heritage of Peter I and lingered for several centuries is excellent chicken fillet rolls. They do not lose their popularity, and to this day they remain leaders in orders in the best restaurants in Europe, where they are usually served with fine wines. But if you use the following recipes, you can cook and taste the delicacy without leaving your home.

Chicken mini rolls with mushrooms and cheese can be prepared for a festive table or for a family dinner. It takes a lot of time to cook them, so it’s better to set aside a day off for this or prepare the filling in advance. The dish is interesting in that, by changing the products for the filling, you will get a new taste that will never get bored. In addition, it can be served hot or cold. We will prepare rolls from chicken legs, the same rolls can be made from chicken fillet.

Ingredients

  • leg or part of it (chicken legs) - 2 pcs.;
  • champignons - 150 - 200 g;
  • bulb - 1 pc. (small);
  • carrot - 1 pc. (small);
  • cheese (hard grade) - 50 - 70 g;
  • vegetable oil - for frying;
  • seasoning for chicken or pepper, salt.

Cooking

1. Wash the leg (or part of it) and dry it well. We took chicken legs, make an incision along with a sharp knife, carefully separate the meat from the bone.


2. Put a plastic wrap on top of our meat (a bag will do) and beat it well (however, the meat should not tear at the same time).


3. Season the resulting fillet with chicken seasoning. If you don't like seasoning, use spices to your liking (salt, black pepper).


4. Wash mushrooms and cut into small pieces.


5. Pour oil (vegetable) into the pan and put the champignons for frying.


6. While the mushrooms are fried, we clean the onion and cut it into small cubes.


7. Three peeled carrots on a fine grater.


8. Add the onion to the fried mushrooms.


9. You can immediately add the prepared carrots. We simmer everything a little, mixing well.


10. Our filling is ready. We shift it into a bowl.


11. Grate hard cheese.


12. Put the mushroom stuffing (from one edge) on the chicken meat, sprinkle with cheese on top. You can add a teaspoon of beaten egg. In our case, we do without it.


13. We turn mini rolls, bending the side edges of the meat.


14. It turned out a small chicken roll. Since we have two parts from the leg, we get two small rolls.


15. So that the meat and the filling do not fall apart, we tie them with threads. Fry the rolls in a pan with vegetable oil. It is enough to fry them for two minutes over high heat on both sides until golden brown.


16. We shift the rolls into a mold with butter and put in the oven. Top can be covered with foil. The oven should already be preheated. We keep them in the oven for 20 minutes at a temperature of 180 degrees.


17. We take out the finished chicken rolls and transfer them to a plate. Once cool, remove threads and cut into small pieces.

Boiled chicken roll with smoked cheese and mushrooms

There are many recipes for making chicken rolls: some choose chicken fillet, others choose ham. There are just as many fillings for the roll: vegetables, mushrooms, dried apricots, prunes, bacon, cheese, herbs, nuts. I suggest preparing a juicy and appetizing chicken roll with the effect of a smoked crust, specifically from a chicken ham, since its skin can be interestingly processed. For the filling, I choose champignon mushrooms and smoked pigtail cheese, which will saturate the taste with aroma and juiciness. A boiled roll will be more useful, but the highlight of the marinade in which you will cook will be prunes and onion husks.

This boiled roll does not require much time and cooking skills, but is suitable for a family dinner with any side dish, as well as for a festive table. Try this recipe and you won't regret it!

Ingredients

  • Chicken leg - 2 pcs.
  • Champignon mushrooms - 100 gr.
  • Smoked pigtail cheese - 30 gr.
  • Onion - 2 pcs.
  • Onion husk - 1 zhmenya
  • Prunes - 1 sap
  • Star anise - 1 pc.
  • Bay leaf - 1 pc.
  • Colored peppercorns - 10 pcs.
  • Ground black pepper - 1/3 tsp.
  • Salt - 3 tbsp. l.
  • Provence herbs - 1/3 tsp

Cooking Chicken Roll

We disassemble the chicken legs so that there are no bones, cut in half and put the edges on top of each other, leaving no gap between them.

Then, using a cling film or a bag, beat off with a kitchen hammer so that the meat becomes soft and evenly distributed over the entire surface. Salt a little, pepper and add a pinch of Provence herbs.

Washed and peeled champignons mode into small cubes. Next, put the sliced ​​\u200b\u200bmushrooms on the beaten meat.

We prepare a roll of raw champignons, you can also use fried mushrooms.

We disassemble the smoked pigtail cheese into thin fibers and put it on top of the mushrooms.

Instead of smoked cheese, grated hard cheese can be used.

Now carefully, but carefully, with the help of a thread, wrap the meat with all the ingredients in a roll. Make sure that the filling does not fall out, and the roll does not fall apart. It is better to use a thick cotton thread.

In a large pot filled with water, put all the spices: salt 3 tbsp. spoons, peppercorns, star anise, bay leaf. And most importantly - washed 2 onions, husks and prunes. Now you can dip the previously prepared chicken roll into a container and cook for 1 hour. After this time, leave it saturated with taste in a closed pan for another 30 minutes.

  • 350 g chicken fillet
  • 150 g fresh champignons
  • 100 g hard cheese
  • 1 onion
  • 50 ml sunflower oil
  • salt and ground black pepper to taste
  • 0.5 tsp seasonings for chicken
  • a few sprigs of fresh dill

How to cook chicken roll with mushrooms and cheese:

Let's prepare the filling first. Peel the onion from the husk and cut into small cubes.

We wash fresh mushrooms, if necessary, clean and cut into cubes.

Pour a little vegetable oil into a frying pan and fry the onion in it until soft. Then add chopped mushrooms to the onion. Stirring, we will fry the ingredients until all the moisture has evaporated from the pan.

Grind a piece of hard cheese on a grater with a large cloth.

Add grated cheese to the stuffing with mushrooms and onions. Salt and season the mixture with spices, mix.

We wash the chicken fillet, dry it from moisture and clean it from films. Cut the fillet into two thin pieces, following the recipe for chicken roll with mushrooms and cheese.

Having covered the chicken fillet with cling film, beat it with a culinary hammer.

Salt the meat and season it with spices. Put the mushroom stuffing on top. Spread it over the fillet in an even layer.

Gently roll the chicken fillet with the filling into tight rolls. We fix the rolls with a thread. Fry the rolls until golden brown on both sides in sunflower oil.

Then transfer them to a heat-resistant baking dish.

To fill the chicken roll, soak dry mushrooms in boiling water for 30 minutes, then boil, finely chop for 20 minutes. Cut the onion and champignons into small cubes, chop the garlic. Fry onion and garlic until soft butter. Add mushrooms and fry until the liquid has evaporated. Add boiled mushrooms, marjoram and chopped parsley, salt and pepper, cook for another 5 minutes. Remove from heat, cool and stir in Parmesan.

Place a damp cloth under the cutting board to keep the board from moving around the table. Place the chicken breast side down. Make a cut along the spine and begin to separate the meat by cutting it with a knife along the sides of the spine.

Carefully cut the meat off the bones, moving down along the ribs and thighs. When you get to the wing joints, cut them open, but don't separate the wings from the skin. Cut the joints between the thighs and shins. When working, try not to damage the skin. If the chicken has warmed up and it becomes difficult to work, put the carcass in the refrigerator for 30 minutes.

When you have cut all the meat off the sides of the breastbone, make an incision between the skin and the protrusion of the breastbone and separate the bone completely. You will get a carcass with wings and legs.

Cut off the first phalanx of the wings. Then make cuts along the remaining parts of the wings and drumsticks, cut off the meat and remove the bones and sinews. Lay the chicken carcass skin side down on a board and lightly beat off the breast, covering with cling film. Put the filling in the middle and wrap the edges so that they are on top of each other.

Wrap the roll with kitchen twine every 2-2.5 cm, do not tighten it too tight. Bake for approximately 1 hour 15 minutes. in an oven preheated to 190°C.

Chicken roll with mushrooms will be easier to cut if, after cooking, wrap it in foil and put it in the refrigerator for 8 hours.
