A modern multi-cooker appliance will help you prepare interesting and tasty dishes, even from budget varieties of fish. To achieve a true delicacy, it is very important to use fresh fish. A dish made from defrosted fish will have a completely different taste. Proven red fish recipes are collected in this article.

Fish steak in foil

Main Ingredients

  • steaks from fresh red fish (sockeye salmon, trout, salmon, pink salmon, etc.);
  • coarse salt, used to taste;
  • spices for steak (add to taste);
  • vegetable oil (sunflower) for processing the bowl;
  • culinary aluminum foil (based on each serving of steak).

IMPORTANT! This dish will take 1 hour and 30 minutes to prepare.

  • 1 step. Cooking red fish begins with cutting the steaks. To do this, it is better to buy whole, uncut fish. After removing the scales, separating the head, tail, fins, and removing the entrails, the fish is cut with a very sharp knife or kitchen scissors.
  • Step 2. Cutting the carcass into steaks with scissors should start from the belly, moving around the circumference, cutting through the ridge with scissors or a knife. The separated pieces are used to prepare fish soup. Using scissors, according to users, allows you to get portions of any thickness with intact skin and meat.
  • Step 3. The resulting portions should be placed on a cloth or paper napkin to remove excess moisture. Turn the pieces several times to better dry the steaks.
  • Step 4 While the moisture is draining from the fish pieces, prepare foil for baking it in a slow cooker according to the number of servings. The size of the foil should ensure that the portions are tightly packed so that the juice remains inside the bag during cooking.
  • Step 5 Rub the finished portions with salt and spices and pack tightly in foil.
  • Step 6 Lubricate the surface of the multicooker bowl with vegetable oil.
  • Step 7 Place the steak pieces in the prepared bowl of the device in a single layer. This will ensure the steak cooks evenly.
  • Step 8 Set the device to a conventional mode of 110 degrees; 15 minutes are enough for cooking.
  • Step 9 After turning off the multicooker, carefully turn over the bags of steak and turn the multicooker back on without changing the settings.
  • Step 10 The remaining portions of steaks are prepared in the same way.
  • Step 11 Hot steaks are released from packaging immediately after removal from the device. Cooled fish lobes are difficult to separate from the foil, which can ruin their appearance.

This multicooker fish appetizer turns out very soft, tender and tasty. It can be eaten immediately, but after some time the steak can be reheated, and the taste of the delicacy will not change.

There are many side dish options for this dish. This could be fried vegetables, such as potatoes or zucchini.

Red fish in a slow cooker - ingredients:

  • Trout - 500 g;
  • Dry herbs - 1 pinch (basil, oregano, etc.);
  • Dried ginger - 1 pinch;
  • Mixture of peppercorns - 1 pinch;
  • Salt - 1 pinch;
  • Nutmeg - 1 pinch.

How to cook red fish in a slow cooker?

First, wash and dry the fish. We clean it of excess films and cut it into portions.

Prepare the spices: mix a mixture of peppers (it is better to use pea spices), salt, dry herbs, nutmeg and dried ginger. Mash all ingredients thoroughly in a mortar or using a kitchen hammer. If desired, add other fish spices.

Coat each piece of fish thoroughly with the resulting mixture. Leave the fish in the spices for 1-3 hours so that it “takes” the seasoning well.

After the fish is soaked, we begin the cooking process. The ideal option is steaming. To do this, pour water into the multicooker and place it in a special container. This fish can also be cooked in multicooker bowls by selecting the “Steam” mode. Depending on the size of the pieces, the fish will take 20-30 minutes to cook.

When the fish is cooked, carefully remove it and serve it to the table, adding any side dish or your favorite sauce.

Bon appetit!

Greetings, friends and readers of my recipe!

My recipe is adapted for the VITEK-4209 multicooker, but I am sure that in most multicookers you can set the desired mode.

Preparation.

Step 1. Take part of the red fish. I have this sockeye salmon. But you can use other fish. I usually buy whole fish, cook fish soup from the head and tail, and use the fish itself to cook steaks.

Step 2. We clean the fish from scales and cut off the fins, it is important not to damage the meat inside. Otherwise, the steak will turn out shapeless and the meat will be loose.

Step 3. Cut the fish into steaks. The knife must be very sharp, otherwise you can ruin the appearance of the steaks.

Step 4. Place the sliced steaks on paper for 5 minutes so that excess moisture is removed from them. Then turn it over to the other side and leave it on the paper for another 5 minutes.

Step 5. While the steaks are lying on the paper, prepare separate foil for each steak. I got 6 steaks. The piece of foil should be large enough to wrap the steak tightly to prevent any juices from escaping.

Step 6. Take salt and spices. I use coarse salt, it’s easier to rub into the steak. Of the ready-made seasonings for red fish steaks, my favorite is lemon seasoning.

Step 7. Take one piece of prepared foil and place one steak on it in the center.

Step 8. Rub the steak with salt and spices to taste on one side. Then we turn it over and repeat the procedure on the other side.

Step 9. Then wrap the steak tightly in foil.

Step 10. Repeat steps 7-9 with all steaks.

Step 11. Grease the multicooker bowl with sunflower oil.

Step 12. Place the steaks so as to cover the bottom of the multicooker bowl. It is important to lay them out in only one layer, so they will bake better.
In my case, I will cook in batches of 3 steaks.
Turn on the Convection mode 110°, 15 minutes.
This mode is pre-configured once and saved. By default it is not there.

Step 13. After the set time has passed, when the multicooker turns off, turn the steaks over and start the same mode again.

Step 14. After cooking one serving of steaks, repeat steps 12-13 for the next serving.

Step 15. After removing the finished steaks from the multicooker, they must be separated from the foil while hot. Regardless of whether you eat them immediately or later. Otherwise, when they cool down, it will be very difficult to do this.

The steaks are soft, tender and tasty. They should be served with a side dish and, if desired, can be additionally decorated with herbs.

You can eat them either immediately or warmed up. The taste is not lost.

Bon appetit and I hope my recipe was useful to you!
