Pancakes on kefir with holes - recipes for thin, tasty, delicate pancakes. Pancakes on kefir How to cook pancakes on kefir

Thin pancakes on kefir, openwork and with holes - this is another type of these delicious fried products that is worth exploring. We have already cooked and they were also with holes, there will be some differences in the recipes, but also a lot of similarities. In one of the past recipes, I told you about how to cook on kefir, and now we will cook so that the same kefir will help us make pancakes thin and perforated, like lace. It's all about the test, I'll tell you and reveal a few secrets.

First of all, the whole thing, of course, is in the kefir itself, which, as a product of lactic fermentation, releases carbon dioxide, that is, it simply bubbles. And if you add soda to it, then the process will also intensify. By the way, for pancakes, you can and even need to use the kefir that has already stood for a couple of days and its expiration date is nearing its end, but has not yet expired. It's all about fermentation, which intensifies over time. If you have a bag of unfinished kefir in your refrigerator, then making pancakes from it is the best and most delicious way to use it.

Still, good kefir without chemical additives is not worth more than three days, but it is not always possible to drink. Once, I had such a case that I brought kefir from the store, which I bought, forgetting to look at the date of manufacture. It was already coming to an end, and even the package was slightly puffed up. Kefir had not yet had time to deteriorate, but was close to that. So I saved the situation with a whole stack of delicious pancakes for the whole family. And then I bought a new kefir.

Let's see how to cook delicious thin pancakes on kefir.

Delicious pancakes on kefir in a hole - a recipe with boiling water

Such pancakes on kefir with boiling water, otherwise called custard. True, this is not quite the same as choux pastry, for example, for eclairs. Here, all the brewing is that steep boiling water is added, which helps the flour disperse and dissolve all the ingredients. the dough becomes homogeneous, and then the pancakes are thin and strong. They do not tear and do not crumple.

You will need:

  • kefir - 2 cups,
  • flour - 2 cups,
  • eggs - 2 pieces,
  • sugar - 2 tablespoons,
  • salt - 1/4 teaspoon,
  • baking soda - 1/2 teaspoon.

Cooking:

1. If you have already cooked pancakes before, then you probably remember that the easiest way to start is by stirring the eggs and sugar. Beat them just a little, just to mix the sugar, salt and eggs until smooth and slightly frothy.

2. Then pour kefir into the egg mass and stir a little more with a whisk so that they are well connected. Kefir will even foam a little from active stirring, and this is only to our advantage.

3. Now it's time to gradually add the flour. Do this in parts, each of which stir. This will result in fewer lumps, which are sometimes very difficult to grind in the finished dough. It is also good if the flour is sifted through a sieve or a special mug.

4. The dough should be homogeneous and thick enough, like cream or sour cream. Why, you ask, if we cook thin pancakes. Then I will remind you that we have pancakes on kefir and boiling water. We have already poured kefir, and boiling water will bring the dough liquid to the desired one.

5. Boil water in a kettle, pour into a mug immediately, do not let it cool down. Now add baking soda to the water and stir until it dissolves well. And after that, boiling water with soda can be poured into the dough and immediately begin to stir it quickly. If you do not hesitate, then the dough does not curl and does not boil, everything is perfectly mixed until a homogeneous consistency. At the end, add vegetable oil and stir until the oil mugs on the surface disappear.

6. After that, our dough will be liquid enough to make the pancakes thin and delicate. Soda and kefir will react and begin to produce bubbles. It's time to start baking pancakes.

Preheat the pan, if there is a cast-iron or special pancake pan, spread it with a thin layer of oil. Despite the fact that oil was added to the dough, the very first time you need to smear the pan.

Pour the pancakes into the pan using a ladle. Tilt it so that the dough is thin and evenly distributed.

7. It is not at all difficult to determine when it is time to flip the pancake. Along the edges, it begins to blush and lag behind the pan, and the middle becomes dense, and with holes. Lift the pancake with a spatula or knife and turn over. It will be golden and openwork. On the other side, you need to cook the pancake a little less time, literally a minute or two, and it's time to shoot.

Each finished pancake can be lubricated with a slice butter while it is still hot. These pancakes are very tender and smell delicious.

The oldest mention of pancakes Eastern Slavs refers to 8th century. It was a ritual bread, which, according to the beliefs of the Slavs, connected the world of the living and the world of the dead, and was baked at burial or at a wake.

How to cook pancakes on kefir: a step by step recipe

Depending on the desired degree of delicacy of the finished pancakes, two cooking methods are used - on cold (room temperature) and hot kefir. In the first case, small holes will be obtained, in the second - large ones. The cooking process includes several stages.

Before cooking pancakes on kefir, using step by step recipe, you need to make the dough.

At the first stage, you need to do the following operations:

Among the Eastern Slavs, women in childbirth had to eat pancakes before giving birth - the souls of their ancestors would help to give birth safely and protect the mother and child from evil.

While the dough for pancakes on kefir is standing, you should proceed to the second stage - preparation for frying:

  • heat the pan (should be moderately hot);
  • dissolve soda in cold boiled water. Soda solution should be injected into the most last turn, so the dough should first be a little thicker than what we usually cook for pancakes;
  • pour the soda solution into the dough, check for lumps, add vegetable oil (so that it does not stick to the pan when frying) and stir.

The next stage is the final one: frying.

  • Lubricate the heated pan before frying the first pancake with lard;
  • pour the dough with a ladle into the pan, evenly distribute;
  • fry on one side, pry, turn over and fry on the other side. All! Thin pancakes on kefir are ready!

When frying pancakes on cold kefir, you should make sure that the pan does not overheat, otherwise the dough will quickly fry without baking. In this case, the soda will not have time to decompose, and the taste of the finished product will deteriorate.

The finished product must be stacked on a dish, lubricated with butter.

To get larger holes, before starting the preparation of the dough, it is necessary to heat the kefir. Pancakes on hot kefir should be baked as described in the recipe with a photo step by step in the previous version, with the exception of two points:

  • soda solution is introduced into the warm dough. In heat, soda will begin to act actively - loosen the dough. Therefore, you should not knead it for a long time, you need to start frying immediately;
  • second point - the pan should be hot.

On average, 14-16 pancakes are obtained (depending on the size of the pan and thickness).

How beautiful to decorate and serve pancakes

Lush pancakes on kefir do not really need a special presentation. Laid out in a pile, they look appetizing. As snacks for pancakes, liquid and thickened honey, a variety of preserves and jams, sour cream, yogurts are perfect. Can be used fresh fruits, sprinkle with powdered sugar, pour liquid chocolate.

The tastes of red caviar, salted or smoked salmon are in perfect harmony with the taste of pancakes.

You can make a wide variety of fillings - depending on the availability of ingredients and a flight of fancy.

The dough for pancakes on kefir can be made in advance and left at room temperature for two to three hours. During this time, it will fit and become more magnificent, the pancakes will turn out to be more elastic and will not tear when frying. 400 g of kefir
about 170 g flour (you may need a little more or less)
2 eggs
salt
sugar
0.5 teaspoon of soda

A national, Russian holiday is approaching - a wide Maslenitsa. And we will say goodbye to winter and welcome spring. And we will meet her with delicious, oily, openwork pancakes. Among the Slavs, pancake symbolizes the sun. And we treat each other with such delicious suns so that spring will come soon.

Classic pancake dough starts up usually. But pancakes on kefir are no less popular in Russia and throughout the post-Soviet space. Flour is used more often wheat of the highest grade. But there are dough recipes from buckwheat and corn flour.

The most delicious way to cook, of course. The most diverse fillings are wrapped in pancakes. Used for this cottage cheese, cheese, chopped meat, fried mushrooms, red and black caviar. Or sweet, berry fillings with lingonberries, blueberries, cherries. Even the youngest members of the family can put the filling in the middle of the pancake and roll it into a roll. We have already learned how to cook even.

Pancakes do not bother us, because they are baked from different test and serve them differently. Unsweetened - with sour cream, butter, caviar. Or sweet - with jam, jam or condensed milk. This is a dish that we are ready to eat every day. And on Maslenitsa there is simply no such hostess who would not cook several varieties of this festive treat for her family and guests.

I am preparing for the holiday thoroughly and have already described in detail how to start. And today I want to consider several options for testing on kefir or yogurt. They are all different and all delicious and fragrant in their own way. Choose what you like and cook with joy and good mood!

In 2018 Maslenitsa will last from 12 to 18 February. And I'm already starting to cook different variations of pancakes to meet the holiday fully armed. And, of course, in order to collect and publish here a list of the most best recipes. I hope that they will be useful to you.

A proven recipe for thin pancakes on kefir

All my family and friends have already raved about this easy pancake batter recipe. I start it on homemade yogurt or on purchased kefir. And these pancakes are always tasty and ruddy. They bake quickly and don't stick to the pan.

My secret is in preparing the test. On cold kefir, pancakes will be in a small hole. From the test on heated kefir, the holes will be large.

Now we will take kefir at room temperature. From this amount of products you will get 14 - 16 pieces of pancakes. I'm only cooking today to show you all the recipes, so I'm going to start with just a little bit of dough. If you wish, you can double the amount of products.

What you need:

How to cook:

I took out everything I needed for the test from the refrigerator in advance, and the products lay warm for at least an hour. I sifted the flour.

If the kefir is slightly warmed up, then the holes in the pancakes will be larger.

I start kneading the dough. Whisk two eggs with salt and sugar in a bowl. I add a little kefir and sprinkle flour with a tablespoon, continuing to mix with a whisk.

Knead the dough not thick and not liquid. I leave it to rest for half an hour. Cover the bowl with a lid or plate.

If the pancakes are stuffed, then during this time you can prepare the filling.

After half an hour, I dissolve the soda in two tablespoons of warm water, pour it into the dough and mix well. If the dough was with lumps, now they have completely dispersed and the mass has become homogeneous.

It remains to pour a couple of tablespoons of vegetable oil into the dough, mix thoroughly again and leave for at least another half hour. During this time, soda will interact with kefir and the dough will begin to bubble like yeast. Let's start baking pancakes.

Before cooking, the pan must be heated over high heat and greased with oil or a piece of lard.

I pour the first portion of the dough into a greased frying pan and put it on fire. I usually grease only once, as there is enough vegetable oil in the dough.

When the pancake is fried for a minute, holes appear on it. Like in this photo. Turn it over with a spatula and fry on the other side for no more than a minute.

Pancakes are porous, thin and melt in your mouth. I put each on a plate and grease with melted butter.

If you stuff, then you can not lubricate, immediately wrap the filling in them.

It's that simple, no hassle. And now consider a more sophisticated recipe for pancake dough.

Custard pancakes on kefir with boiling water

Thin, delicate and very openwork pancakes will be obtained from custard kefir dough. In them a large number of small and large holes. It's not hard at all to make them. I show again on a small number of products.

What you need:

Cooking:

In a large bowl, mix eggs and kefir with a whisk. Gradually add salt, sugar and soda.

Kefir for this recipe we take cold, directly from their refrigerator.

This is so that the soda does not have time to start interacting with kefir ahead of time. I sift the flour into a bowl and quickly break up any lumps. The dough turned out thick, like pancakes.

Now I pour a glass of boiling water and start pouring it into the dough in portions. Stir quickly at the same time. When all the boiling water is poured in and the dough is brewed, it turned out to be of such density and texture as liquid cream.

Do not forget that the thinner the dough, the thinner and thinner the pancakes will be.

In a warm frying pan, I melt a piece of butter and pour it into the dough. When the butter is already in the dough, then you can not lubricate each finished pancake.

Let's start baking. Pour the dough into a hot frying pan and wait until one side is fried. It takes me one minute to bake. If your stove does not heat up so much, then make sure that the pancake is browned enough and turn it over.

My result is 22 delicious, mouth-watering "suns". Pour tea and serve pancakes with sour cream, condensed milk or whatever your heart desires.

Fluffy pancakes - american pancakes

This video from Yliya Small shows a step by step recipe for sweet mini pancakes that are very popular in America. Look how fluffy and delicious they are!

Perhaps pancakes resemble both pancakes and pancakes at the same time. They are lush and soft like pancakes, but they are not baked in oil, but in a dry frying pan, like pancakes. Americans serve them with their popular maple syrup.

And we again return to our Russian pancakes.

Openwork pancakes on kefir and milk with soda

Another equally delicious and very quick recipe. We combine kefir with milk and soda. As a result, we get such a living dough that plays and bubbles.

In order for soda to quickly begin to act, kefir needs to be slightly warmed up.

And while baking, this gives us such thin, lacy pancakes that you eat, eat .. and still want!

What you need:

How to cook:

All products must be taken out of the refrigerator in advance and allowed to warm to room temperature.

I start by slightly warming the kefir in a saucepan. On low heat and stirring constantly. I let it warm up to 40 degrees C.

Do not overheat kefir over 60 degrees. It can curl up and get curd.

Now I drive eggs into warm kefir, pour in all the dry ingredients and add vegetable oil. I beat everything with a whisk and get a thick dough. I dilute the dough by pouring milk in portions and constantly stirring.

In warm kefir, soda immediately begins to play. The dough is ready for baking. The pan is already heating up over high heat. I grease it with oil or a piece of lard before the first pancake.

This is how kefir dough bubbles and large holes are obtained in pancakes. Fry for one minute on each side and remove to a wide plate. Brush each pancake with melted butter.

From quick dough and pancakes are quickly ready. I got 20 pieces. Serve while hot. Happy tea!

There is an opinion that only a cast-iron pan should be used for pancakes. Maybe someone except for cast-iron pancakes does not work.

A new frying pan must be ignited with salt for half an hour on the highest heat.

When I bake pancakes, I use two different pans. And sometimes even three. There are cast iron, and Teflon, and with a ceramic coating. Pancakes are excellent in all pans. The main thing is to warm up well and grease the pan before the first pancake.

Custard pancakes on kefir and milk

We have not tried choux pastry with hot milk yet. I'm going to make some of these pancakes. especially since it is also one of quick recipes. You don't need to take the test. We knead and immediately begin to cook.

We take out all products from the refrigerator at least an hour before cooking.

What you need:

How to cook:

  1. Kefir is poured into a saucepan and slightly heated, stirring constantly.
  2. I break eggs into a bowl, add warm kefir, vegetable oil and pour in soda, sugar and salt.
  3. Constantly stirring, add flour and knead a thick dough.
  4. I put the milk on the stove to boil in a saucepan.
  5. Pour boiled milk in small portions into the dough, quickly stirring with a whisk.
  6. The dough is brewed. I heat the frying pan over high heat and bake pancakes.
  7. I fry each side for no more than one minute.
  8. Put the finished pancakes on a plate and grease with melted butter.

This is how the dough for pancakes is brewed with boiling milk. This, of course, gives a much tastier and more delicate result than simply brewed with boiled water.

It is convenient to knead the dough in a deep and wide bowl. We find a suitable bowl or saucepan and break the eggs into it. If these are small eggs, then we need two pieces. If the egg is large, then one is enough. If there are few eggs in the dough, then pancakes on kefir will be difficult to remove from the pan. Two eggs should usually suffice.

  1. Beat the eggs with a whisk or a fork with long teeth, until a homogeneous mass is obtained. Like an scrambled egg.
  2. Pour salt and sugar into the eggs. Stir until sugar dissolves.
  3. Add two tablespoons of vegetable oil. A couple more strokes of the whisk.

  5. Slowly adding, mix flour into the dough. The most delicious pancakes on kefir are obtained from a dough that resembles sour cream in density.
  6. Then pour the baking powder or half a teaspoon of soda.
  7. When we see what constitutes a homogeneous mass - it's time to bake pancakes.

How to bake pancakes on kefir

Pancakes on kefir can be baked in any oil. Someone likes to fry pancakes in lard, someone likes margarine, and someone likes to bake them in butter. The most economical and convenient option, yet vegetable oil. It must be well heated in a pan before pouring the dough. It is very convenient to distribute vegetable oil with a half of a small potato, dressed on a fork. Then pancakes on kefir do not burn, and they turn out ruddy and tasty.

Step one. Pour, on a well-heated frying pan, a small amount of vegetable oil. With a slice of potato, dressed on a fork, evenly distribute along the bottom and walls of the pan.

Step two. With a kitchen soup ladle, or just a large spoon, pour our first pancake into the pan. In order not to get a lump, as in a popular saying, the amount of dough should be such that pancakes on kefir are evenly distributed over the bottom of the pan. To do this, we tilt the pan at an angle, in the direction in which we want to distribute the dough. In the direction from the middle to the edges, distribute the dough. How much dough to capture for one pancake, it will be clear already from the third masterpiece, which turned out to be not lumpy at all. This is not difficult.

Step three. As soon as pancakes on kefir begin to brown from the edges, they should be turned over and fried on the other side.

We put the pancakes on a flat dish, one on top of the other. They are baked quite quickly and with a small amount of vegetable oil.

Tip: You can melt some butter and brush the pancakes with it as soon as they are removed from the pan. Then kefir pancakes will retain their unsurpassed taste and aroma even the next day.
